All is well if you have a packet of Maggi noodles and eggs in your kitchen. This is a classic recipe that requires eight ingredients. Plus, you don’t need anyone’s help to make this even if you’re a beginner. 

 

You’ll need:

Salt (to taste), 1 tbsp oil, 3 tbsp coriander leaves, chopped, 2 eggs (beaten), 1 large tomato (finely chopped), 3 green chillies (finely chopped), 1 large onion (finely chopped) and 1 pack of Maggi noodles.

 

To make:

Heat oil in a wok and saute the onions. Add green chillies and tomatoes once the onions turn light brown and soft. Continue to saute until the tomato softens. Gradually mix in the beaten eggs and mix using a fork until well combined. Add salt and keep aside. In another wok, cook Maggi noodles as per packet instructions. Add the noodles to the egg bhurji mix and give it a good stir. Remove in serving bowls and serve hot garnished with coriander leaves.

 

Notes: 

  1. Add tri-coloured peppers to increase the fiber content and vitamin C. This will also make your noodles flavourful and delicious.
  2. Replace green chillies with dry red chillies (chopped). Add 5-6 curry leaves while sauteeing the onions and tomatoes. Garnish the noodles with a few drops of freshly squeezed lemon juice for an Authentic Indian Egg Maggi Recipe.

I learnt this recipe during my first year of college. I could always be found at the canteen eating this street-style Maggi for a quick lunch or a snack because it was so filling! A few weeks later, my canteen guy was more than happy to share his secret recipe with me. The trick was to add lots of chillies, capsicum and onions and soon enough I was making this recipe for all my sleepovers and was an instant hit among my friends!

Over the years, I’ve recreated this recipe and added shredded cabbage for a little crunch. 

 

Servings: 2    Preparation time: 10 minutes    Cooking time: 15 minutes    Total time: 25 minutes    Course: Appetiser, Breakfast, Main Course

 

You’ll need:

2-3 tbsp Hot and Sweet Maggi Tomato Sauce, 5-6 tsp vegetable or olive oil, ½ tsp red chilli powder, ½ tsp garam masala, Pepper and salt (to taste), ½ tsp roasted cumin powder, 1 cup cabbage (shredded), 1-2 Green or red chillies (finely chopped), ½ cup bell peppers (finely chopped), ½ medium-sized onion (finely chopped), 1 – 1 ½ cups water, 140 grams Maggi Noodles (or 2 individual packets) and 3 eggs.

 

To make:

Cook the Maggi noodles as per packet instructions. Heat oil in a wok and saute the onions until they turn crisp. Add the chillies and capsicum and continue to saute for 2-3 minutes. Toss in the shredded cabbage along with roasted cumin, red chilli and turmeric powders, salt and garam masala. Cook for a few seconds before adding Maggi tomato sauce and sauteing for a minute. Collect all the vegetables onto one side of the wok. Break the eggs on the other side, scramble and combine them with the vegetables. Continue to cook until the mixture turns dry. Mix in the cooked Maggi noodles and cook for 2-3 minutes before removing from the flame. Serve after garnishing with black pepper.

 

Note: You can also add boiled corn along with Maggi tomato sauce.

You’ll need:

3 tbsp Shudh Ghee, ¼ cup spring onions (chopped), 2 eggs, Salt (to taste), 1 tsp red chilli flakes, ½ cup cabbage (thinly sliced), ¼ cup green capsicum (thinly sliced), ⅓ cup red bell pepper (thinly sliced), 3 button mushrooms (sliced), ¼ cup green peas (blanched), 5-6 french beans (chopped and blanched), 1 onion (finely chopped), 3 tsp garlic (finely chopped) and 2 individual packets or 140 grams of Maggi noodles.

 

To make:

Add salt and eggs in a bowl. Add ghee in a pan over medium heat and add the egg mix once it heats up. Cook the omelette before cutting it into strips. Heat another pan over a high flame before pouring a little ghee. Saute the garlic until golden and fragrant. Add onion and saute for 2 minutes before adding the french beans and peas. Saute for another minute before adding the mushrooms. Cook for 2-3 minutes. Stirring in between. Let the mushrooms release all the water and the edges turn golden brown. Toss in the cabbage and bell peppers and saute for 2 minutes before adding the tastemaker, salt and chilli flakes. Give it a good stir and reduce the flame to low. Meanwhile, cook the Maggi noodles as per packet instructions (without the tastemaker). Drain and add the noodles to the vegetables. Increase the flame and give it a good toss before adding the omelette strips. Garnish with spring onions and serve immediately.

 

Note: If you’re fond of cottage cheese, add a few cubes to it or garnish with some grated cottage cheese.
