- 1 small onion sliced
- 2 tsp olive oil
- 2 individual packets of Maggi
- Pepper and salt to taste
- ¼ tsp roasted cumin powder
- ¼ tsp turmeric powder
- 3 tsp spicy ketchup
- ¼ tsp red chilli powder
- ½ tsp garam masala powder
- 3 eggs
- 1-2 green and red chillies chopped (optional)
- Green coriander finely chopped (optional)
Cook Maggi noodles as per packet instructions.
In a wok, heat oil and stir fry the vegetables over high flame for 2-3 minutes or until crisp. Add all the spices along with the ketchup and stir. Continue to cook for a minute before pushing the vegetables to one side of the work.
Break the eggs on the other side and mix them together. Cook until everything is dry.
Add the cooked noodles and cook over high flame for 2 minutes. Serve immediately garnished with finely chopped green coriander.
