Instructions
Firstly, combine the Rub ingredients. Rub the brisket all over. If time allows, place it in the fridge for 30 minutes to 24 hours.
Secondly, in a slow cooker, combine the BBQ Sauce ingredients. Mix in the brisket, then squish it in if necessary.
Cook for 8 hours on low in a slow cooker.
Place the brisket on a tray.
Then, pour the liquid from the slow cooker into a saucepan. Bring to a simmer over medium-high heat. Reduce until it reaches the consistency of syrup (it thickens more as it cools).
Meanwhile, drizzle the brisket with oil and roast for 15 minutes, or until brown spots appear, in a 200°C/390°F oven. Remove from oven and baste with Sauce before returning to cook for 5 minutes. Remove and baste again, then return to oven for 5-10 minutes until it caramelises.
Lastly, to serve, slice brisket across the grain and serve with remaining BBQ Sauce. This is terrific for serving as a meal with sides or piled high onto rolls with Coleslaw as sliders.
