We’ve compiled all of our favourite salad recipes here. These tried and true recipes guarantee a satisfying, delicious meal. 

 

Chicken Club Salad

This classic filling from the sandwich is reinvented that results in a tasty salad. Onion, celery, tomatoes and chicken breasts are dressed with vinegar and mayonnaise on a bed of lettuce along with crumbled bacon.

 

Time required: 45 minutes

Servings: 4

 

Ingredients:

1 tbsp white wine vinegar

½ cup light mayonnaise

2 celery stalks, sliced + ½ cup celery leaves

½ red onion, finely chopped

3 plum tomatoes, washed, quartered, seeded and cut into ½” pieces

Salt and pepper, to taste

4 skinless, boneless chicken breast halves

6 slices of bacon

 

To serve:

Lettuce leaves

 

Instructions:

  1. Preheat the oven to 400°. Line a baking tray with aluminium foil. Arrange the bacon slices on the tray and bake for 10 minutes or until it begins to render the fat. Flip the bacon and bake on the other side.
  2. Season the chicken breasts with pepper and salt and place them on the tray. Bake until the chicken is completely cooked and the bacon is crisp and brown or for about 15-20 minutes.
  3. Remove from the oven and allow to cool on kitchen towels. Drain and crumble the bacon. 
  4. Combine vinegar, mayonnaise, celery leaves, celery, onion and tomatoes together.
  5. Cut the chicken into ½” pieces and add to the salad. Add pepper and salt and toss until well coated. 
  6. To serve, arrange lettuce leaves on a plate before adding the salad on it. Sprinkle crumbled pieces of bacon over it. 

 

Spicy Shrimp Caeser Salad

This is one of those salad recipes that’s liked by everyone alike. 

 

Time required: 30 minutes

Servings: 4

 

Ingredients:

11/2 lb romaine lettuce, cut into 1” pieces

4 anchovy fillets, washed and minced

2 tbsp Parmesan cheese, grated + more 

2 tbsp lime juice

¾ lb shrimp, washed, peeled and deveined

Salt and pepper, to taste

11/2 tsp chilli powder

2 tsp olive oil

4 5” corn tortillas

 

  1. Instructions:
  2. Preheat the oven to 375°. Place the tortillas on a baking tray after brushing both sides with a teaspoon of oil. Sprinkle ½ teaspoon chilli powder, pepper and salt. Bake until crisp and golden turning once in 8-10 minutes. Allow cooling before breaking them into pieces.
  3. Heat a broiler. Add shrimp with the remaining chilli powder, oil, pepper and salt. Arrange the shrimp on the broiler pan and cook until opaque and browned turning once every 3-4 minutes. 
  4. In another bowl, mix together pepper, salt, water, anchovies, Parmesan, lime juice and mayonnaise. 
  5. Combine everything together and serve garnished with Parmesan. 

 

Antipasti Pasta Salad

This easy salad is perfect for potlucks and picnics.

 

 

Time required: 25 minutes

Servings: 4

 

Ingredients:

1 cup parsley leaves

4 tsp extra-virgin olive oil

2 tbsp red wine vinegar

2 ounces salami, thinly sliced and quartered

½ red onion, sliced lengthwise

8 pitted green olives, sliced

2 roasted peppers, cut into ½” strips

4 ounces bocconcini or mozzarella, cut into ¾” pieces

2/4 lb twisted pasta, cooked

Pepper and salt, to taste

½ cup of pasta water

 

Instructions:

  1. In a bowl, add oil, pasta water, salami, onion, olives, peppers, mozzarella, pepper, salt and pasta. 
  2. Add parsley and serve warm. 

 

Hearty Lentil Salad

Tangy goat cheese brings out the best in this salad.

 

 

Time required: 40 minutes

Servings: 4

 

Ingredients:

4 ounces goat cheese

1 stalk celery, cut into ¼” pieces

Salt and pepper, to taste

2 cups spinach, washed, stemmed and chopped

2 tbsp sherry or balsamic vinegar

4.75 ounces of green lentils

3 shallots, thinly sliced and separated

3 tbsp extra-virgin olive oil

2 tsp parsley, finely chopped

1 red capsicum, cut into ¼” pieces

1 carrot, cut into ¼” pieces

 

Instructions:

  1. Boil water in a saucepan and add lentils. Simmer and stir occasionally until tender or for 15 minutes. Drain and keep aside.
  2. Heat 2 tablespoons of oil in a large pan on medium heat. Add shallots and cook until they soften or for 2 minutes. Add capsicums, celery and carrots and cook until they turn tender or for 5 minutes. Stir in the remaining oil, vinegar and parsley. 
  3. Add lentils to the vegetables along with pepper, salt and spinach. Crumble and sprinkle goat cheese before serving. 

 

Greek Salad

This is one of the tastiest salad recipes of all time.

 

 

Time required: 10 minutes

Servings: 4

 

Ingredients:

3 ounces feta, diced

½ cup pitted olives, chopped

1 red onion, diced

1 green capsicum, diced

3 tbsp extra virgin olive oil

3 tbsp lemon juice

Salt and pepper, to taste

1 cucumber, diced

1 cup grape tomatoes, halved

 

Instructions:

  1. In a bowl, mix oil and lemon juice along with pepper and salt.
  2. Toss in red onions, olives, capsicum, cucumber, tomatoes and lettuce. Mix until well combined.
  3. Top it up with feta and serve immediately. 

 

Tortilla, Corn and Bean Salad

This beautiful salad can be put together in less than 30 minutes.

 

Time required: 25 minutes

Servings: 4

 

Ingredients:

¾ cup Jack cheese, grated

3 cups tortilla chips, baked and broken

1 bag romaine hearts, roughly chopped

Pepper and salt, to taste

3 plum tomatoes, sliced

1 avocado, peeled and cubed

1 cup scallions, finely sliced

¼ cup prepared tomato salsa + more for serving

2 cups frozen corn kernels

1 can of pinto beans, drained

 

Instructions:

  1. In a microwave-safe bowl, add salsa, corn and beans. Microwave for a minute or until warmed through. Add in the tomatoes, avocado and scallions along with pepper and salt. Set aside.
  2. In another bowl, combine chips and lettuce. Add the cheese and mixture and top it up with salsa. Serve immediately.
