Preheat your oven to 325°F.
Add oats, flax seeds, dates, pecans and ground coffee to a mixing bowl.
Add almond butter, vanilla extract, salt, water and brown rice syrup to a pot and heat on a medium-low flame. If your mixture looks thick, gradually add 1 tablespoon of water.
Add this butter mixture to the oats mixture. Stir to ensure all the ingredients are well combined.
Spread this mixture on a rimmed baking sheet with no voids between the ingredients.
Bake this mixture for 30 minutes. Once it is halfway through, flip the mixture over and bake again in the oven.
Remember not to overbake your granola as it will continue to turn crispy.
Take it out of your oven and let it cool. Your granola is ready!
