Equipment

  • A mixing bowl
  • A small pot for the stove
  • An oven or microwave
  • A whisk 
  • A baking sheet
  • An airtight container for storage

Ingredients
  

  • ¼ cup of ground coffee organic
  • 3.5 cups of oats
  • ¼ cup of Medjool Dates
  • ¼ cup of flaxseeds
  • 1 tbsp vanilla extract
  • ¼ cup of raw chopped pecans
  • ½ cup of almond butter (Preferably runny)
  • ½ cup of brown rice syrup
  • ½ tsp sea salt

Instructions
 

  • Preheat your oven to 325°F.
  • Add oats, flax seeds, dates, pecans and ground coffee to a mixing bowl.
  • Add almond butter, vanilla extract, salt, water and brown rice syrup to a pot and heat on a medium-low flame. If your mixture looks thick, gradually add 1 tablespoon of water. 
  • Add this butter mixture to the oats mixture. Stir to ensure all the ingredients are well combined.
  • Spread this mixture on a rimmed baking sheet with no voids between the ingredients.  
  • Bake this mixture for 30 minutes. Once it is halfway through, flip the mixture over and bake again in the oven.
  • Remember not to overbake your granola as it will continue to turn crispy.
  • Take it out of your oven and let it cool. Your granola is ready!
