Ingredients
  

  • ½ Cauliflower grated
  • 4 Chicken Loins or Breasts
  • Salt and Pepper
  • 1 tsp chipotle chilli powder
  • ½ tsp ground cumin
  • ½ tsp garlic powder
  • ¼ Romaine Lettuce Head shredded
  • ½ cup Guacamole or Avocado
  • ½ cup Pico de Gallo

Instructions
 

  • Firstly, add the olive oil to a nonstick skillet and heat it over medium-high heat.
  • Then, add the salt and cauliflower rice, and simmer for an extra 15 minutes, or until tender. Remove it after cooking and place it aside.
  • Also, you can season the chicken with salt, pepper, chipotle chilli powder, cumin, and garlic. While the cauliflower rice is cooking. To make sure the chicken is covered with the seasoning, prefer to do this in a bowl.
  • Cook the seasoned chicken in the same skillet that you cooked the cauliflower rice in.
  • Next, cook the chicken for 5-7 minutes on each side, or until the internal temperature reaches 165°F.
  • Now that the cauliflower and chicken have cooked, you may mix everything together in a bowl!
  • To begin, fill the bowls with lettuce and cauliflower rice. Then, serve with chicken, guacamole, and pico de Gallo on top. If you want to take your meal to the next level, serve this keto cheese sauce alongside these keto tortilla chips!

Notes

  • Use fresh ingredients. Fresh ingredients will give your bowl the best flavour and texture. Use fresh chicken, ripe avocados, and crisp lettuce to enhance the taste of your dish.
 
  • Grate the cauliflower. Grating the cauliflower into small, rice-like pieces will give the dish the perfect texture.
 
  • Cook the chicken properly. Cook the chicken to ensure that it is safe to eat. Use a meat thermometer to ensure that the internal temperature of the chicken reaches 165°F.
 
  • Season the chicken well. Use a variety of spices to season the chicken, such as chilli powder, cumin, and garlic powder. This will add flavour and depth to the dish.
 
  • Let the guacamole and Pico De Gallo chill. Allow the guacamole and pico de gallo to chill in the refrigerator for at least 30 minutes. (before serving). This will allow the flavours to meld together and enhance the taste of the dish.
 
  • Customize to your liking. Feel free to add or subtract ingredients to make the dish your own. Add more spice if you like it hot or add extra vegetables for more nutrients.
 
  • Use high-quality olive oil. Use high-quality olive oil to cook the cauliflower and chicken. This will add a rich flavour to the dish and provide healthy monounsaturated fats.
